Molasses, which are known to have a protective effect against diseases such as the common cold, become harmful to health when exposed to heat of 180 degrees and above. Experts warn citizens that molasses can produce carcinogenic compounds when exposed to heat of 180 degrees and above. Harmful substances such as acrylamide and hydroxymethylfurfural (HMF) formed during heat processing can negatively affect the benefits of molasses and make it harmful to health.
Experts stated that molasses should not be cooked above 180 degrees and said, “Honey and molasses are used as an addition instead of sugar when making cookies or cakes in order to make them healthier. Since the formation of substances known to be carcinogenic increases when these foods are used, it is not recommended to use them at high temperatures.
Instead, we will use either sugar in cakes or we can use dried fruits. However, here again, since there is fruit sugar, we should be careful not to cook the desserts we make with dried fruits above 180 degrees. In this way, you can make them healthy and consume them by paying attention to portions.
